This past week I made Garden Grazer’s Ultimate Greek Salad. It’s been a super tasty lunch option for the week and a nice cold salad to have on hand as the weather warms up. If you need a way to get some veggies in, here’s your recipe.
– diced red pepper
– diced roma tomatoes
– diced cucumber
– 15oz of garbanzo beans
Dressing Ingredients: 3 TBSP Red Vinegar, 1/4 cup olive oil, 2 tsp dried oregano, 1/4 tsp salt. Whisk these ingredients together.
Dice all ingredients above and mix with dressing. Personal suggestions: feta cheese. I also think this would be excellent with Italian dressing. I let this sit in the fridge for a while before eating. I also paired this with chicken for lunch and it was pretty great.
