This recipe is so easy I have it memorized after one go!
1. Mash 3 ripe bananas.
2. Add 1 beaten egg and 3/4 cup sugar.
3. Add 1/3 cup melted butter.
4. Add this wet mixture to a bowl that has 1 1/2 cups flour, 1 tsp baking soda, 1 tsp baking powder, and 1/2 tsp salt.
*optional step at this time: add chocolate chips*
5. Bake for 20 minutes at 375 degrees.
Yesterday we stole the bulk of the day for taking the boat out on the lake for the first fishing expedition. We spent more time getting snagged, redoing our lines, and attaching leeches and worms than we did reeling in any fish. All I could think of the whole time was “my grandpa is a great fisherman and he must have gone through many trips like these to get there!” We now know a) how big Stump lake is, b) to always bring a map of the lake with you, and c) that the game and fish wardens really do check for your fishing license and life jackets.
I found this recipe after we got back for the day and I knew if it wasn’t simple and quick those poor bananas would hit the trash. This recipe used up 3 ripe bananas and made 12 muffins. Happy snacking and quick baking at the end of full days!
