Taste of Home is my go-to as far as recipes go… after a long day of working followed by grocery shopping and errand running, the last thing I want to do is spend more time than necessary in the kitchen for a good meal. This recipe satisfied our craving for home cooked but was super easy to put together and have ready to go. This would be an excellent make ahead meal and freeze, but I wanted to give it a go around first before going crazy. Enjoy!
Spread 1/2 cup pasta sauce into a greased 11×7-in. baking dish. Layer with 3 cups frozen meat or cheese ravioli (no need to thaw), 1 1/2 cups fresh spinach, 1/2 cup mozzarella cheese and 1 cup of pasta sauce. Repeat layers. Sprinkle top with 1/2 cup mozzarella. Bake, uncovered, at 350 degrees for 45 minutes or until edges are bubbly and cheese is melted. Let stand 5+ minutes before eating. (from Pamela Nicholson in Festus, MO – thanks, Pamela!)
Modifications: I used three cheese ravioli but fried up my own Italian sausage to add to the mix. J isn’t crazy about spinach and he didn’t even mind it in here! I would definitely make some of these up as freezer meals to have on hand. Super simple, tasty, and great leftovers.
